100% Arabica, Varietal – Cauvery, Popularly known as Catimor. It is a cross between Caturra & ‘Hybrido-de-Timor’. Caturra is a natural mutant of the famous Bourbon variety. Thus, Cauvery inherited the high yielding and superior quality attributes of Caturra and the resistance of ‘Hybrido-de-Timor’.
Castle Black is an Anaerobic black honey from the renowned Ratnagiri Estate produced with all the care by Mr. & Mrs Parte in the beautiful mountain range of Chikmangalur, Karnataka. For this Lot, the ripest coffee cherries were harvested with an average Brix reading of 24.5. After removal of floats there cherries were placed in stainless steel tanks and all the oxygen was purged out of the tanks. Where the coffee was subjected to anaerobic fermentation for 48 hours.
After undergoing anaerobic fermentation these coffees were pulped and were put on raised beds under the watch of The Commander Mr. Ashok Parte, these coffees were dried under the shade, constantly stirring on the raised beds was done to ensure uniform drying.
The Aromatics have a good intensity of citric character with Limey smell, Toffee undertones also honey-like sweetness. In the cup, the coffee has bright acidity giving it sweetness & brightness. Has nuances & layers of pleasant but delicate Clementine & Zesty notes along with the sweetness of toffee.
