I really enjoyed each of these coffees. I ground whole beans in a Hario Mini mill and brewed coffee in a v60.
Persea: This was my favorite. It is a syrupy brew that packs powerful acidity and sweetness. The rich aromas of jam, figs and berries lead to flavours of fig, tangerine and berry compote. The interplay of the fruit-forward flavour and rich body is particularly pleasing. It tasted best at a 1:16 ratio, ground med-fine.
Honey'd: A medium body with a powerful jaggery note in the aroma that made me feel really happy. A wine-y brew with flavours of grapes and honey. Hints of floral notes as well. Tasted best at a 1:16.6 ratio (60g/1L), ground med-fine, just a tad coarser than Pearsea (1 click coarser on my Mini Mill).
Dark! Dark! Dark!: An exciting brew that presents a more "classic" coffee flavour profile but with a twist. A rich body that tastes of chocolate covered raisins, nuts with a hint of lime. Best brewed stronger at 1:15, ground med-coarse (like sea salt).
One star knocked off not due to the quality of the coffee, but because the roasters took a week or so to ship out the coffees.
